1 c. tightly packed new spinach leaves

1/3 of 13-oz can (about 3 oz.) chicken meat

3 T. shredded mozzarella

1 T. pumpkin seeds, sensitive or roasted (optional)

2 T. my Sofrito mayonnaise (besides if you like)

2 San Marzano or cherry tomatoes, divide in halves

DIRECTIONS:  Wash spinach foliage and pat dry with paper towels.  Place in successi~ serving plate.  In a illiberal bowl, mix the chicken and sofrito mayo.  Add chicken regimen and stir well.  Spoon chicken association on top of salad.  Top through mozzarella and if using, the pumpkin seeds.  Garnish through tomato halves.  If you like a actually wet salad, add more of the sofrito mayo.
